We often go confused with the little left over vegetables that not only takes space in our refrigerator but also don't make a good dish if put together. Here is our Chef Smita who teaches you a simple way to bring these left over vegetables together and make a wonderful dish out of it!
Peas | 1 Cup (16 tbs) , boil | |
Diced potatoes | 1 Cup (16 tbs) , boil | |
Diced carrots | 1 Cup (16 tbs) , boil | |
Cauliflower florets | 1 Cup (16 tbs) , boil | |
Chopped french beans | 1 Cup (16 tbs) , boil | |
Diced bell peppers | 1/2 Cup (8 tbs) (red bell pepper and green capsicum) | |
Pepper powder | 1/2 Teaspoon | |
Chopped garlic | 1 Tablespoon | |
Onions | 3 Medium , finely chopped | |
Tomatoes | 4 , finely chopped | |
Degi mirch powder | 1 Tablespoon | |
Ghee | 2 Tablespoon | |
Turmeric powder | 1 Teaspoon | |
Coriander powder | 1 Tablespoon | |
Cumin powder | 1 Teaspoon | |
Punjabi garam masala | 1 Teaspoon (roopak) | |
Sugar | 2 Teaspoon | |
Salt | To Taste | |
For spice powder: | ||
Coriander seeds | 2 Tablespoon | |
Cumin seeds | 1 Teaspoon | |
Fennel seeds | 1 Teaspoon | |
Kashmiri red chilli powder | 1 Teaspoon |
MAKING:
1.Heat the ghee and add the garlic and the onions and sauté till translucent.
2.Add the tomatoes add the tomatoes and cook till oil oozes.
3.Heat ghee add the chilli powder, turmeric powder, coriander and cumin powder, spice powder and Punjabi garam masala and add this to the gravy.
4.Add salt, sugar and sauté the capsicum in it.
SERVING:
5.Add the veggies and cook on a low flame for 5 minutes and serve hot.
