For garam masala
Red chillies 5
Cinnamon stick 1 Inch
Cumin seeds 1 Teaspoon
Coriander seeds 1 Teaspoon
For ginger garlic paste:
Ginger piece 1 1/2 Inch
Garlic 9 Clove (45 gm)
For kadai chicken:
Boneless chicken 250 Gram
Turmeric powder 1 Teaspoon
Salt 1/2 Teaspoon
Lemon 1/2 , juiced
Ghee 1 Tablespoon
Bay leaves 2
Green cardamoms 9
Cloves 7
Sliced onions 2
Tomatoes 2
Green chillies 2
Green pepper 1 , chop
Garam masala 1/2 Teaspoon
Coriander leaves 1 Tablespoon ((for garnish))




1.In a pan add dry red chillies, cinnamon, cumin seeds, coriander seeds and roast them.

2. Grind together the roasted spices.



1.Add half of the masala into a bowl of clean boneless chicken.

2.Make ginger and garlic paste by grinding together ginger, garlic and water.

3. Add half the paste into the chicken.

4. Add turmeric, salt, lemon juice and marinate the chicken properly.

5.Refrigerate it for half an hour.


6.In a pan add ghee and cook on low flame.

7.Add bay leaves, green cardamom, cloves and let the spices tamper.

8.Add chopped onion and once they become translucent.

9. Add ginger garlic paste and mix it well.

10.Add green chillies and stir it properly.

11. Add the chopped tomatoes and cook on high flame.

12.Add the masala and salt and give it a proper stir.

13.Add the marinated chicken into the pan and cook on high flame.

14.Cover it with the lid and let it cook on low flame for 5-7 minutes.

15.Add green pepper and cover the lid and cook it for more five minutes.

16.Add coriander leaves and stir properly.

17.Add a pinch of garam masala.


18.Kadai Chicken is ready to be served.
