Zippy Zucchini Skillet
|Vegetable oil||2 Tablespoon|
|Zucchini||4 Medium, thinly sliced|
|Onion||1 Medium, chopped|
|Canned whole kernel corn||16 Ounce, drained|
|Canned chopped green chiles||4 Ounce (1 Can)|
|Seeded chopped jalapeno peppers||2 Teaspoon|
|Garlic powder||1⁄8 Teaspoon|
|Shredded cheddar cheese||2 Ounce (1/2 Cup)|
Heat oil in a large skillet; add zucchini and onion, and saute 10 minutes or until tender.
Stir in remaining ingredients except cheese; cook, stirring occasionally, until thoroughly heated.
Remove from heat; stir in cheese.
