Two Minute Zucchini
Wash zucchini and cut off stem and blossom ends.
Using hand grater, coarsely grate zucchini into plate placed underneath grater.
Heat 10 inch skillet over high heat; add margarine and when it bubbles add zucchini, tossing lightly with fork.
Cover for a very few seconds if you like, but 2 minutes cooking is all it takes to heat thoroughly.
Add salt and pepper to taste.
