Healthy Stuffed Zucchini
|Zucchini||2 Large, sliced in half, lengthwise|
|Sour cream||1 Cup (16 tbs)|
|Garlic powder||1⁄2 Teaspoon|
|Shredded jack cheese||1⁄4 Cup (4 tbs)|
|Wheat germ||2 Tablespoon|
Arrange zucchini in glass baking dish.
Cover, cook on high (9) for 4 to 6 minutes or until tender.
Scoop out enough pulp to make a 1/4 inch indentation.
In mixing bowl, thoroughly mix sour cream and garlic powder together.
Spread evenly onto zucchini halves.
Sprinkle with shredded cheese and wheat germ.
Cook on high (9) for 1 to 2 minutes or until cheese is melted.
