Stuffed Baked Zucchini

Chef is making stuffed zucchini. Zucchini belong to the gourd family. It is light and healthy vegetable. Often found in stir fried dishes. It tastes well and blends with other flavors.
Ingredients
  Zucchini 400 Gram
  Cheese 1 Cup (16 tbs), grated
  Margarine 1 Tablespoon (for the mixture 1)
  Pepper powder 1⁄2 Teaspoon (for the mixture 1)
  Garlic 1 Teaspoon (for the mixture 1)
  Anchovy oil 1 Tablespoon (for the mixture 1)
  Bread crumb 1⁄2 Cup (8 tbs) (for the mixture 2)
  Sage 1⁄2 Teaspoon (for the mixture 2)
  Oregano powder 1 Teaspoon (for the mixture 2)
  Tomato 2 Medium, pureed (for the sauce)
  Tomato flakes 1 Tablespoon (for the sauce)
  Tomato pasta sauce 1⁄2 Cup (8 tbs) (for the sauce)
Directions

GETTING READY
1. Take 2 medium zucchini and cut it into half.
2. Core the middle portion.
3. In a bowl mix margarine, pepper, garlic & anchovy oil.
4. And in another bowl mix the zucchini pulp, breadcrumbs,red capsicum, anchovies,sage & oregano.
5. In a bowl mix tomato puree,tomato flakes & tomato paste.

MAKING
6. In a pan heat oil and add the mixture of margarine, pepper, garlic & anchovy oil cook in low heat.
7. Add the zucchini pulp, breadcrumbs,red capsicum, anchovies,sage & oregano mixture and mix all ingredients well.
8. Add the tomato mixture, cook all the ingredients together.
9. Stuff the mixture in zucchini and sprinkle cheese.

SERVING
10. Bake it 15-20 minutes and serve.
