Zucchini-Cauliflower Sweet Relish

Ingredients
  Zucchini 10 Cup (160 tbs), ground
  Cucumber 4 Cup (64 tbs), ground
  Onions 4 Medium, ground
  Cauliflower head 2 Small, ground
  Water 1 1⁄2 Cup (24 tbs)
  Salt 3 Teaspoon
  Vinegar 3 Cup (48 tbs)
  Sugar 5 1⁄4 Cup (84 tbs)
  Dry mustard 1 1⁄3 Tablespoon
  Turmeric 1 1⁄3 Tablespoon
  Pepper 1 Tablespoon
  Celery seed 2 2⁄3 Tablespoon
  Nutmeg 1 1⁄3 Tablespoon
Directions

Cop the above vegetables.
If using large zucchini, remove seed.
Put in large container, add salt and water.
Cover and let stand overnight.
Next morning drain, and add ALL spices and vinegar and sugar.
Bring to a light boil and cook 30 minutes.
Pour into hot sterile jars.
