Healthy Herbed Zucchini
|Water||1⁄2 Cup (8 tbs)|
|Minced fresh parsley||1 Teaspoon|
|Minced fresh chives||1 Teaspoon|
|Minced fresh basil||1 Teaspoon|
|Minced fresh rosemary||1 Teaspoon|
|Minced dill weed||1 Teaspoon (fresh)|
|Freshly ground pepper||To Taste|
Cut zucchini in half lengthwise.
Place water in a large skillet; arrange zucchini in skillet, cut sides up.
Combine herbs and pepper; sprinkle over zucchini.
Bring water to a boil; cover, reduce heat, and simmer 4 to 6 minutes or until zucchini is crisp-tender.
Carefully transfer to a serving platter.
