Stuffed Zucchini

  Zucchini 3
  Salt To Taste
  Minced onion 2 Tablespoon
  Butter 3 Tablespoon
  Soft bread crumbs 1 Cup (16 tbs)
  Cooked tomatoes 1⁄2 Cup (8 tbs)
  Pepper To Taste

Cook zucchini in boiling salted water for 10 minutes; drain.
Halve zucchini lengthwise.
Scoop out pulp; reserve shells.
Mix pulp, onion, butter, bread crumbs and tomatoes; season to taste.
Spoon mixture into zucchini shells; arrange on baking sheet.
Bake at 350 degrees for 15 minutes or until tops are lightly browned.
