If your kids are not very fond of zucchini, the best way to get them to eat the veggie is by baking a batch of these healthy and delicious Lemon Zucchini muffins. These are fast and easy to make and are wonderful for breakfast, a snack, or an afternoon teatime treat. They don't contain any butter and the zucchini adds a whole lot of fiber. These keep well too but they are so good that there it is unlikely that there will be any leftovers.
