Zucchini and Rotini
|Olive oil||5 Tablespoon|
|Garlic||1 Clove (5 gm)|
|Plain yogurt||2⁄3 Cup (10.67 tbs)|
|Finely grated parmesan cheese||1 Cup (16 tbs)|
|Freshly ground black pepper||To Taste|
1)Scrub and cut zucchini into thin sticks, about 1 1/2 inches long.
2)Use heavy skillet to heat oil.
3)Saute zucchini until golden and till soft.
4)Chop onions and put garlic through press.
5)Remove zucchini from skillet with slotted spoon and set aside.
6)Add onions, garlic and saute until onions are golden.
7)Stir in yogurt and cook quickly until mixture has thickened a little.
9)Add drained rotini, zucchini, and 1/2 cup cheese.
10)Season with salt and pepper and toss well.
12)Serve with remaining cheese.
