Stuffed Zippy Zucchini

Ingredients
  Zucchini 2 Medium
  Ricotta cheese 3 Ounce
  Minced parsley 1 Teaspoon
  Onion 1 , chopped
  Egg white 1 , stiffly beaten
  Tomato sauce 8 Ounce (1 can)
Directions

GETTING READY
1) Preheat the oven to 300F.

MAKING
2) Slice the zucchini lengthwise into halves.
3) Scoop the pulp out, leaving out 1/2-inch of the casing behind.
4) In a bowl, mix together the ricotta cheese, parsley and onion. Mix well.
5) Fold int the egg white into the cheese mixture. Transfer the stuff into the zucchini halves.
6) Tranfer the zucchinis into the baking dish. Pour the tomato sauce over the xucchini.
7) Bake for about 10 minutes.
8) Turn down the oven temperature to 250F.
9) Bake the zucchini for 30 more minutes. Keep basting the zucchini with the tomato sauce.

SERVING
10) Serve the Stuffed Zippy Zucchini with grated cheese.
