Microwave Healthy Stuffed Zucchini
|Zucchini||2 Large, sliced in half lenghtwise|
|Sour cream||1 Cup (16 tbs)|
|Garlic powder||1⁄2 Teaspoon|
|Jack cheese||1⁄4 Cup (4 tbs), shredded|
|Wheat germ||2 Tablespoon|
1. In a large glass baking dish, place the zucchini and cover, cook on HIGH (9) for 4 to 6 minutes or until tender.
2. In the zucchini, scoop out enough of the center to make a 14-inch indentation.
3. In a large mixing bowl, place the sour cream and garlic powder and mix well. Spoon this into the zucchini halves. Sprinkle with shredded cheese and wheat germ. Cook on HIGH (9) for 1 to 2 minutes or until cheese is melted.
4. Serve hot
