Zucchini Tomato Skillet

Ingredients
  Green onion 1⁄2 Cup (8 tbs), sliced
  Garlic 1 Clove (5 gm), minced
  Salad oil 1 Teaspoon
  Sugar 1 Teaspoon
  Bay leaf 1
  Unpeeled zucchini 2 Pound, sliced 1/2 inch thick to make 6 cups
  Peeled tomatoes 3 , cut in eights
Directions

MAKING
1) In a skillet heat oil and add onion and garlic. Stir till tender.
2) Mix sugar, bay leaf, 1 teaspoon salt, 1/8 teaspoon pepper, and zucchini.
3) Cook covered in simmer for 10 minutes, stirring occasionally.
4) Add tomatoes and heat.
5) Take out bay leaf.

SERVING
6) Serve hot.
