Cheese Stuffed Zucchini

Ingredients
  Zucchini 3 (6-Inch)
  Low fat creamed cottage cheese 1⁄2 Cup (8 tbs)
  Grated parmesan cheese 2 1⁄2 Tablespoon
  Chopped scallion 1 Tablespoon
  Parsley 1 Tablespoon, minced
Directions

GETTING READY
1)Preheat oven to 350 degrees F.

MAKING
2)Steam cook zucchini or else place in microwave proof bags and microwave for 2 minutes.
3)Once cooled, slit length wise and deseed.
4)Mix together scallion, cottage cheese, Parmesan cheese and parsley.
5)Using a spoon, transfer cheese mixture into zucchini shells.
6)Top with Parmesan cheese.
7)Bake until cheese melts and browns.

SERVING
Serve warm.
