Zucchini Ziti

Ingredients
  Minced onion 1⁄2 Cup (8 tbs)
  Butter/Margarine 1⁄2 Cup (8 tbs)
  Minced green pepper 1⁄2 Cup (8 tbs)
  Zucchini 2 Pound, sliced
  Peeled seeded chopped tomatoes 3 Cup (48 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Canned sliced mushrooms 4 Ounce, undrained (1 Can)
  Ziti pasta/Other short pasta 1 Pound
Directions

Saute onion in hot butter for 2 minutes.
Add all other ingredients except ziti.
Cover and cook over low heat for about 30 minutes, stirring frequently.
Zucchini slices should be tender, but still preserve their shape.
Serve on hot cooked ziti.
Makes 6 servings.
