Beef & Fruits Stuffed Zucchini
|Zucchini||3 Small, cut into 3/4" inch pieces|
|Ground beef||1⁄2 Pound|
|Onion||1 Small, chopped fine|
|Garlic clove||1 Small, minced|
|Chopped peeled tart apple||1⁄4 Cup (4 tbs)|
|Tomato paste||1⁄4 Cup (4 tbs)|
With a spoon, hollow out each zucchini piece about half way down, leaving 1/4" (6 mm) on side.
Place ground beef in plastic colander over casserole.
Cook on HIGH 2 1/2 minutes until beef loses pink colour.
Combine beef and remaining ingredients in casserole and cook on HIGH 3-4 minutes.
Pile into zucchini shells.
Heat 8 at a time in a circle on a microproof plate, until zucchini is just heated through.
