Zucchini Steam Saute
|Zucchini||8 Small (4 To 5 Inches Long)|
|Vegetable oil/Olive oil||1 Tablespoon|
|Boiling water/Chicken broth||4 Tablespoon|
|Freshly ground black pepper||To Taste|
Wash and trim zucchini but do not peel.
Slice on a diagonal into ovals.
Slice green onions and tops.
Heat oil in heavy pan with a tight lid and add onions and zucchini.
Stir with wooden spoon over medium-high heat until colors deepen and vegetables are shiny.
Add boiling water or chicken broth and salt.
Cover and cook over lowered heat until crisp-tender, 4 to 5 minutes.
Add a few grindings of pepper and serve.
