Layered Zucchini And Tomato
|Zucchini||1 Cup (16 tbs) (1/4 Inch Thick)|
|Onion||2 Tablespoon, sliced|
|Dried basil||1⁄8 Teaspoon|
|Tomato||1 Medium, cut into 1/2 inch thick slices|
|Sour cream||1⁄4 Cup (4 tbs)|
|Parmesan cheese||2 Teaspoon, grated|
Mix zucchini, onion, salt, basil and pepper in 1-quart casserole.
Cover with waxed paper and microwave on high (100%) until zucchini is crisp-tender, 1 to 1 1/2 minutes; stir.
Place tomato slices on zucchini.
Mix sour cream and cheese; spread over tomato slices.
Cover with waxed paper and microwave on medium-low (30%) until tomato slices are warm, 1 1/2 to 2 minutes.
Sprinkle with additional grated Parmesan cheese if desired.
