Zucchini A La Russe
|White onion/Red onions||1|
|Sour cream||1 Cup (16 tbs)|
|Chopped fresh dill/1 teaspoon dried dill||1 Tablespoon|
|Fresh tarragon/1 pinch dried tarragon||3|
|Freshly ground black pepper||1|
Remove tips and slice zucchini paper thin.
Sprinkle with salt and put in strainer to drain for about 30 minutes.
Blot zucchini dry with paper towels and layer in pretty glass bowl with thinly sliced onion separated into rings.
Mix sour cream with dill and tarragon, a little black pepper if you wish.
Pour over vegetables, cover with foil and chill.
Mix gently and sprinkle with more dill or chopped parsley.
