|Onions||2 Medium, sliced|
|Vegetable oil||3 Tablespoon|
|Green bell pepper||1⁄2 , chopped|
|Garlic powder/1 garlic clove, pressed||1⁄4 Teaspoon|
|Crumbled dried oregano||1⁄2 Teaspoon|
|Crumbled dried basil||1⁄2 Teaspoon|
|Zucchini||6 Medium, sliced into 1/2-inch rounds|
|Marinara sauce||2 Cup (32 tbs)|
In a large skillet, saute onions in vegetable oil for 5 minutes. Add green pepper, salt, garlic, oregano and basil. Cook 5 minutes or until green pepper is soft.
Stir in zucchini and cook over medium heat for 7 minutes, adding a few tablespoons of water, if necessary. Stir occasionally.
Add marinara sauce. Bring to a low simmer and cook 10 minutes or until zucchini is tender.
