Monster Zucchini Mash
|Zucchini||3 Medium, sliced|
|Cauliflower head||1⁄2 , broken into pieces|
|Garlic||9 Clove (45 gm)|
|Tamari/Soy sauce||1⁄2 Teaspoon|
|Soy sauce/Tamari||1⁄2 Teaspoon|
|Wheat germ||2 Tablespoon|
1. In a large pot of rapidly boiling water, cook the zucchini until tender, 5 to 7 minutes. Remove with a slotted spoon. Boil the cauliflower pieces and garlic together until cauliflower is very tender, 10 to 15 minutes.
2. Mash steamed zucchini with cooked cauliflower, garlic, and soy sauce. Spread into an 8-inch square casserole. Top with wheat germ and dot with butter. Bake in a 350° oven for 1 hour.
