Zucchini And Tomato Saute With Herbs

Ingredients
  Finely chopped onion 1⁄2 Cup (8 tbs)
  Unsalted butter/Olive oil 2 Tablespoon
  Zucchini 2 Small, scrubbed and sliced thin
  Tomatoes 2 , seeded and chopped fine
  Minced fresh mint/Minced fresh basil / parsley leaves 2 Tablespoon
Directions

In a skillet cook the onion in the butter over moderately low heat, stirring, until it is softened, add the zucchini, and saute the mixture over moderate heat, stirring, for 3 to 5 minutes, or until the zucchini is just tender.
Stir in the tomatoes, cook the mixture, covered, for 1 to 2 minutes, or until the tomatoes are just heated through, and stir in the mint and salt and pepper to taste.
