Zucchini And Tomato Saute With Herbs
|Finely chopped onion||1⁄2 Cup (8 tbs)|
|Unsalted butter/Olive oil||2 Tablespoon|
|Zucchini||2 Small, scrubbed and sliced thin|
|Tomatoes||2 , seeded and chopped fine|
|Minced fresh mint/Minced fresh basil / parsley leaves||2 Tablespoon|
In a skillet cook the onion in the butter over moderately low heat, stirring, until it is softened, add the zucchini, and saute the mixture over moderate heat, stirring, for 3 to 5 minutes, or until the zucchini is just tender.
Stir in the tomatoes, cook the mixture, covered, for 1 to 2 minutes, or until the tomatoes are just heated through, and stir in the mint and salt and pepper to taste.
