|Minced onion||1 Tablespoon (dried)|
|Chopped parsley||1 Tablespoon|
|Breadcrumbs||1⁄4 Cup (4 tbs) (dry)|
|Butter/Margarine||2 Tablespoon, melted|
|Cheddar cheese||1 Cup (16 tbs), grated|
Grease an 8-inch square pan; set aside.
Preheat oven to 350°F (175°C).
In a medium bowl, beat eggs; stir in zucchini, onion, parsley, salt, pepper, breadcrumbs, butter or margarine and 1/2 cup Cheddar cheese.
Spoon evenly into prepared pan; sprinkle with remaining cheese.
Bake 20 to 25 minutes in preheated oven until set.
Use a sharp knife to cut 7 rows vertically and 7 rows horizontally making 3/4-inch squares; serve warm.
