Fried Zucchini Flowers
|Zucchini/Squash flowers||2 Dozen|
|Olive oil/Peanut oil||1 Cup (16 tbs)|
|Flour||1 Cup (16 tbs)|
Use only the flowers of the zucchini, removing any stem parts.
Cover with water and soak for 1 hour.
Drain thoroughly and shake lightly in a wire basket to remove moisture.
Heat oil to smoking point in a deep skillet.
Place several blossoms at a time in a paper bag with a few tablespoons of flour and shake until lightly dusted with the flour.
Dip each cluster into the eggs, beaten with salt, and fry quickly in the hot oil.
They need to be cooked only about 2 minutes or until golden.
Drain on absorbent toweling and serve hot.
