Baked Zucchini

You will find the Baked Zucchini a rare treat! Prepare the vegetable with a little effort and let us know what you feel about it.
  Zucchini 5 , scraped
  Olive oil 3⁄4 Cup (12 tbs)
  Onion/1 bunch scallions 1 Medium, sliced
  Water 1 Cup (16 tbs)
  Flour 1 Tablespoon
  Parsley 1 Cup (16 tbs), chopped
  Paprika/Sliced tomatoes 1 Teaspoon (For Garnish)
  Salt To Taste
  Pepper To Taste

Slice the zucchini lengthwise 1/4 inch thick.
Arrange the slices in a baking dish in layers alternately with the onions.
Sprinkle with parsley and salt and pepper to taste.
Pour olive oil and water over all and sprinkle with flour.
Bake in a 350 degree oven for about 40 minutes or until zucchini is tender.
Just before serving sprinkle with paprika or garnish with sliced tomatoes.
