|Zucchini||5 , scraped|
|Olive oil||3⁄4 Cup (12 tbs)|
|Onion/1 bunch scallions||1 Medium, sliced|
|Water||1 Cup (16 tbs)|
|Parsley||1 Cup (16 tbs), chopped|
|Paprika/Sliced tomatoes||1 Teaspoon (For Garnish)|
Slice the zucchini lengthwise 1/4 inch thick.
Arrange the slices in a baking dish in layers alternately with the onions.
Sprinkle with parsley and salt and pepper to taste.
Pour olive oil and water over all and sprinkle with flour.
Bake in a 350 degree oven for about 40 minutes or until zucchini is tender.
Just before serving sprinkle with paprika or garnish with sliced tomatoes.
