Toss peaches, wheat germ and ginger; divide among 4 dishes.
Mix yogurt and 1 tablespoon brown sugar; spoon 1/4 cup yogurt mixture over fruit in each dish.
Top with remaining brown sugar; sprinkle with granola if desired.
Bananas with Yogurt: Substitute 2 medium bananas, sliced, for the peaches.
Sprinkle with ground nutmeg if desired.
Strawberries with Yogurt: Substitute 1 pint strawberries, cut into halves, for the sliced peaches.
