|Egg substitute||3⁄4 Cup (12 tbs)|
|Low fat plain yogurt||1 Cup (16 tbs)|
|Lemon juice||2 Teaspoon|
|Fresh dill/Parsley||1 Tablespoon, chopped|
|Dijon mustard||1⁄2 Teaspoon|
|Freshly ground pepper||1 Pinch|
In the top of a non-aluminum double boiler combine Egg Beaters, yogurt and lemon juice; mix well.
In the bottom of the double boiler place a small amount of water.
Heat water to the simmering point.
Over the simmering water place the top of the double boiler.
Cook for about 15 minutes or until thickened, stirring frequently.
(Mixture will become thinner after cooking for 10 minutes and will thicken again during remaining cooking time.) Remove from heat.
Stir in dill, mustard, salt and pepper.
