Banana Peach Frozen Yogurt
|Drained canned peaches||1 Cup (16 tbs), packed without sugar (Reserve Juice)|
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Peach juice||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Plain non-fat yogurt||3 Cup (48 tbs)|
|Almond extract||1⁄2 Teaspoon|
Puree the bananas and peaches in a food processor or blender.
In a saucepan, stir the gelatin into the peach and lemon juices, and let it soften for 5 minutes.
Add the sugar and salt, and stir over low heat until the gelatin and sugar dissolve.
In a large bowl, blend the pureed bananas and peaches with the gelatin and yogurt.
Pour the mixture into freezer trays or a loaf pan, and freeze until firm.
Turn the frozen yogurt into a large bowl.
Break it into pieces, and add the egg whites and almond extract.
Beat on high speed with an electric mixer until light and fluffy.
Return to the pan and freeze.
