Greek Yogurt Prune Pie
|Walnuts||1 1⁄2 Cup (24 tbs), ground|
|Butter||3 Tablespoon, softened|
|Cream cheese||8 Ounce, softened|
|Lemon||1 Large (about 1/4cup)|
|Cinnamon||1⁄2 Teaspoon, ground|
|Yogurt||1 Cup (16 tbs)|
|Prunes||1 Cup (16 tbs), finely chopped|
Mix together walnuts, butter, and 2 tablespoons honey in a medium-size bowl.
Press into bottom of a 9-inch pie plate, and chill until firm.
In another medium-size bowl, beat cream cheese and 3 tablespoons honey.
Blend in lemon juice and cinnamon.
Gently fold in yogurt and then prunes, separating prune pieces with a spoon.
Turn into prepared shell, and chill for 8 to 10 hours before serving.
