Apricot Yogurt Whip

Ingredients
  Apple juice 1⁄2 Cup (8 tbs)
  Unflavored gelatin 1
  Apricots 3 Cup (48 tbs), halved
  Honey 2 Tablespoon
  Vanilla extract 1 Teaspoon
  Yogurt 1 Cup (16 tbs)
Directions

Pour apple juice into a small saucepan, and sprinkle gelatin on top.
Set aside for 5 minutes to soften.
Puree apricots in a blender or food processor.
In a large bowl, stir together apricot puree, honey, and vanilla.
Heat apple juice until gelatin is dissolved.
Cool, and then add to apricot mixture.
Beat with an electric beater for 3 minutes.
Fold in yogurt, mixing well.
Turn into 4 dessert cups and chill until set, about 2 hours.
