Elfin's Yogurt Dessert

Ingredients
  Skim milk yogurt 1 Cup (16 tbs)
  Lemon juice 3 Tablespoon
  Dry white wine 1⁄3 Cup (5.33 tbs)
  Lemon rind 1⁄2 Teaspoon, grated
  Vanilla 1 Teaspoon
  Artificial sweetener To Taste
  Unflavored gelatin 1 Tablespoon
  Cold water 1⁄3 Cup (5.33 tbs)
  Egg whites 3
Directions

Blend together yogurt, lemon juice, wine, lemon rind, and vanilla.
Add sweetener to taste.
Soak gelatin in cold water; place over low heat.
Dissolve, stirring constantly.
Fold into yogurt mixture; cool until thickened but not set.
Beat egg whites until stiff peaks form.
Fold into yogurt mixture.
Divide among 4 dessert dishes; refrigerate until set.
Just before serving, garnish each with a few cereal flakes and a sprig of mint
