Fluffy Yam Topping

Ingredients
  Yams 2 Cup (32 tbs), cooked and mashed
  Salt 1⁄2 Teaspoon
  Oil 1 Tablespoon
  Milk powder 1⁄2 Cup (8 tbs)
  Unsweetened orange juice 1⁄2 Cup (8 tbs)
  Grated orange rind 1 Teaspoon
Directions

Blend all ingredients and beat until smooth.
Pile lightly around ham casserole, or use instead of pastry in meat or chicken pie.
Bake at 350° F. until meat is heated through, and yam topping is lightly browned.
