Fluffy Yam Topping

|Yams||2 Cup (32 tbs), cooked and mashed|
|Milk powder||1⁄2 Cup (8 tbs)|
|Unsweetened orange juice||1⁄2 Cup (8 tbs)|
|Grated orange rind||1 Teaspoon|
Blend all ingredients and beat until smooth.
Pile lightly around ham casserole, or use instead of pastry in meat or chicken pie.
Bake at 350Â° F. until meat is heated through, and yam topping is lightly browned.
