Curried Yams

Ingredients
  Yams 2 Pound
  Butter 2 Tablespoon
  Onion 1 Medium, minced
  Curry powder 1 Tablespoon (To Taste)
  Chicken 1 Cup (16 tbs)
  Salt To Taste
  Freshly ground pepper To Taste
  Lemon 1⁄2 (From 1/2 Lemon)
Directions

Cook the yams in their skins until three-quarters tender.
Drain, peel and slice or cut into cubes.
Heat the butter in a saucepan.
Add the onion and cook, stirring constantly for 2 or 3 minutes.
Stir in the curry powder and cook 2 minutes longer.
Stir in the consomme.
Bring to the boiling point and lower the heat to low.
Cook, stirring occasionally, for 3 minutes.
Taste and if necessary, season with salt and pepper.
Add the yams and mix well with a fork.
Simmer covered for about 10 minutes or until the yams are tender.
Remove from the heat and sprinkle with the lemon juice.
