Baked Yam Casserole
|Pecans||1 1⁄2 Cup (24 tbs), chopped|
|Whole wheat bread crumbs||3⁄4 Cup (12 tbs)|
|Celery||1⁄2 Cup (8 tbs), chopped|
|Melted butter||3 Tablespoon|
|Egg||1 , beaten|
|Milk||1⁄2 Cup (8 tbs)|
1) Steam the yams and mash them and place in a bowl.
2) Stir in the butter, salt, egg, milk, blend well.
3) Add pecans, celery and bread crumbs, blend and place in a well greased casserole ; finally top with sliced pineapple.
4) Bake in the oven at 350 Deg F for an hr.
5) Serve immediately.
