Gourmet Stuffed Yams
|Apple juice/Cider||1⁄4 Cup (4 tbs)|
|Chopped apple||1⁄2 Cup (8 tbs)|
|Chopped pecans||1⁄4 Cup (4 tbs)|
|Apple wedges||1 (For Garnish)|
Microwave yams on HIGH for 10-13 minutes, or until tender.
Cut a thin, horizontal slice from top of each yam with sharp knife.
Scoop out pulp, leaving 1/4-inch shell.
Heat apple juice or cider in microwave for 30 seconds, or until hot.
Mash and whip pulp with juice.
Stir in apples, nuts and cinnamon.
Pile into shells.
Garnish with apple wedge to serve.
