Twice Baked Yams

Ingredients
  Yams 12 Ounce, well scrubbed and dried (2 Pieces, 6 Ounce Each)
  Margarine 2 Teaspoon, melted, divided
  Salt 1 Dash
  White pepper 1 Dash
  Ground nutmeg 1 Dash
Directions

1. Using tines of fork, pierce potatoes; transfer to oven rack and bake at 400°F.
for 35 to 40 minutes.
2. Cut each potato in half lengthwise and scoop out pulp, being careful not to break skin; transfer pulp to work bowl of food processor and reserve skins.
3. Add 1 teaspoon melted margarine and the seasonings to processor and process until smooth. Spoon 1/4 of mixture into each reserved potato skin and, using the tines of a fork, swirl a design in each. Sprinkle each portion with 1/4 of the remaining melted margarine. Wrap and refrigerate until ready to bake or proceed immediately with Step 4.
4. Place unwrapped stuffed potatoes on nonstick baking sheet and bake at 350°F. until hot, 10 to 15 minutes; turn oven control to broil and broil potatoes until lightly browned, 2 to 3 minutes.
