Yams Cointreau

Ingredients
  Yams/Sweet potatoes 4 Large
  Boiling water 1 Cup (16 tbs)
  Cointreau 1⁄4 Cup (4 tbs) (4 Tablespoon)
  Butter 1⁄4 Cup (4 tbs) (4 Tablespoon)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

Scrub sweet potatoes; drop into boiling water to cover, cover pan, and cook for 30 to 40 minutes, or until tender when pierced with a fork.
Drain, cool enough to handle, and peel.
Mash sweet potatoes; blend in Cointreau, butter, salt, and pepper, and beat until fluffy.
