|Cointreau||1⁄4 Cup (4 tbs) (4 Tablespoon)|
|Butter||1⁄4 Cup (4 tbs) (4 Tablespoon)|
Scrub sweet potatoes; drop into boiling water to cover, cover pan, and cook for 30 to 40 minutes, or until tender when pierced with a fork.
Drain, cool enough to handle, and peel.
Mash sweet potatoes; blend in Cointreau, butter, salt, and pepper, and beat until fluffy.
