Ham And Yams
|Chopped onion||3 Tablespoon|
|All purpose flour||2 Tablespoon|
|Canned unsweetened pineapple chunks||8 1⁄4 Ounce, drained, reserve 1/2 cup juice (1 Can)|
|Packed brown sugar||1⁄3 Cup (5.33 tbs)|
|Chopped cooked ham||2 Cup (32 tbs)|
|Cooked yam/Sweet potato slices||2 Cup (32 tbs) (1/2 Inch)|
1. Put butter and onion into a 1 1/2-quart glass casserole. Cook uncovered in microwave oven 2 minutes at High; stir after 1 minute.
2. Blend flour into onion and butter; stir in reserved pineapple juice. Cook uncovered in microwave oven 1 minute at High, or until thick.
3. Stir brown sugar, pineapple chunks and ham into sauce. Pile in center of an 8-inch round glass cake dish. Put sliced yams around outer edge. Cover with waxed paper.
4. Heat in microwave oven to serving temperature (6 to 8 minutes at Medium-High).
