Robin Miller’s Easy and Healthy Candied Yams
|Yam||2 Pound, cut into 2 inch pieces|
|Non fat greek yogurt||6 Ounce|
|Pure maple syrup||2 Tablespoon|
|Brown sugar/Raw sugar||3 Tablespoon|
|Unsalted butter||1 Tablespoon, melted|
|Ground cinnamon/Pumpkin pie spice||1⁄4 Teaspoon|
- In a pan, place the yams and fill with water, about 2 inches above the yams. Cook for 10 minutes or until fork tender.
- In a high speed blender, add the Greek yogurt and pure maple syrup. Pulse to combine, don’t over mix.
- Reserve the 2 tablespoons of the yogurt mixture and add in all the remaining ingredients. Process until your desired consistency is obtained.
- Take out the yam in a serving bowl and top with reserved yogurt mixture. Serve and enjoy.
