Skate Wings With Field Mushrooms

  Chopped shallots 2 Cup (32 tbs)
  Garlic 1 Clove (5 gm), crushed
  Mushrooms 10 1⁄2 Ounce, cut into thick slices
  Salt To Taste
  Pepper To Taste
  White wine 3 Tablespoon
  Skate wings 14 Ounce
  Egg 1
  Cognac 2 Tablespoon
  Chopped parsley 1 Tablespoon
  Capers 1 Teaspoon

Put the shallots, garlic and mushrooms in a small casserole and season with salt and pepper.
Add the white wine.
Cover and microwave on HIGH for 5 minutes.
Rinse the skate wings under plenty of cold running water and pat dry on kitchen paper.
Arrange in a single layer in a casserole dish and season with salt and pepper.
Cover and microwave on HIGH for 4 minutes.
Break the egg into a bowl and beat with a fork.
Pour in the cooking liquid from the skate wings and beat until incorporated.
Pour the sauce over the mushrooms and microwave on HIGH for 1 minute.
Heat the cognac in a cup, for 30 seconds on HIGH, set alight and pour over the skate wings.
Add the chopped parsley, capers and mushrooms in their sauce.
Stir well.
