Quail Baked In Wine
|Fat||1⁄2 Cup (8 tbs)|
|Cloves||1 Teaspoon, minced|
|Garlic||2 Clove (10 gm), minced|
|Quail||6 , cleaned and washed|
|White wine||2 Cup (32 tbs)|
|Cream||2 Cup (32 tbs)|
Add onions, cloves, peppercorns, garlic and bay leaf; cook several minutes.
Add quail and brown on all sides.
Add wine, salt, pepper, cayenne and chives and simmer until tender, about 30 minutes.
Remove quail to hot serving dish.
Strain sauce; add cream and heat to boiling point.
Pour over quail or serve separately.
Allow one quail for each serving.
