Fresh Cod In Wine
|Onion||1 , finely chopped|
|Garlic||1 Clove (5 gm), crushed|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Tomatoes||3 , peeled and quartered|
|Dry white wine||1⁄2 Cup (8 tbs)|
Wrap fillets in cheesecloth if desired Heat shortening in cooker and tan the onion and garlic lightly.
Put rack in cooker.
Add rest of ingredients around the fish.
Last pour the wine over all.
Close cover of cooker and put pressure control in place.
When pressure is reached, cook for 4 minutes.
Cool at once under running water.
Suggestion for serving: Arrange fish on a platter.
Thicken the gravy, if desired, or dot the fish with butter and a shake of paprika.
A slice of lemon has both eye and taste appeal.
