The Carp In Red Wine is an exquisite and well flavored preparation. I served the Carp In Red Wine last month for an official party at home and I still get calls for the recipe. Don't miss this Carp In Red Wine recipe.
  Carp 3 Pound, dressed
  Onion 1 Medium, chopped
  Parsley 1 Tablespoon
  Dill seed 1 Teaspoon
  Whole peppercorns 3
Red wine 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste

Season the fish with salt and pepper, then wrap it in cheesecloth to prevent fish from falling apart when removed from cooker.
Place the wrapped fish in pressure cooker.
Add rest of ingredients.
Close cover of cooker and set pressure control in place.
When pressure is reached, cook for 8 minutes.
Cool cooker at once under running water.
Drain carp and remove cheesecloth.
