Octopus In Wine

Ingredients
  Octopus 2 Pound
  Bay leaves 3
  Olive oil 1⁄2 Cup (8 tbs)
  Onion 3 Cup (48 tbs)
  Tomato sauce 4 Ounce
  Wine 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Clean the octopus, remove the ink sac and wash well.
Place in a pan and cover with water.
Add the bay leaves and cover.
Simmer until all the water is absorbed.
Drain any remaining liquid.
Remove and discard the skin and cut the octopus into small pieces.
Heat the oil in a skillet and add the onions.
Saute for a few minutes.
Stir in the tomato sauce, wine, salt and pepper.
Cover and cook until tender.
Taste and adjust the seasonings before serving.
