Beef With Shallots And Red Wine Vinegar

Ingredients
  Beef fillet 6 Ounce, 1 fillets
  Butter 2 Tablespoon
  Vegetable oil 1 Tablespoon
  Shallots 1 , finely diced
  Red wine vinegar 1⁄4 Cup (4 tbs)
  Heavy cream 1⁄4 Cup (4 tbs)
  Lemon juice 2 Teaspoon (Or To Taste)
  Salt To Taste
  Pepper To Taste
  Chopped herbs 1 Tablespoon (For Garnish, Chervil, Basil And Tarragon)
Directions

MAKING
1)Pick a small skillet,melt 1 tablespoon butter and add 1 tablespoon oil.
2)Pick the fillet and cook on one side and then the other, until it is done to your taste. For medium rare,cook to 120 degrees on meat thermometer.Once done,set aside.
3)Add the remaining butter and toss in the shallot and cook till it is wilted or golden.
4)Add wine vinegar and whisk,stir well, and pour the cream.
5)Bring to a boil and reduce the liquid by half.
6)Now add the salt,pepper and lemon juice.

SERVING
7)Pour sauce on a warm plate and place the steak on top.Garnish with herbs.
