|Unflavored gelatin||2 Ounce (2 Envelopes)|
|Cold water||1⁄4 Cup (4 tbs)|
|Lemon peel||1⁄4 Teaspoon (Yellow Part Only)|
|Red wine||3 Cup (48 tbs)|
|Madeira||1⁄2 Cup (8 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
Soften the gelatin in the water, using a 1-quart stainless steel or enamelware saucepan.
Add the lemon peel and the wines and stir over very low heat until warm.
Add the sugar and stir until dissolved.
Remove the lemon peel and discard.
Do not let this even come to a simmer.
Pour into a glass bowl or wine glasses and refrigerate until firm.
Top with whipped cream, if desired.
