Wine Steamed Mussels with Orange Segments

|Garlic||3 Clove (15 gm), crushed|
|Chopped oregano||2 Tablespoon|
|Orange rind strip||10|
|Dry white wine||1 1⁄2 Cup (24 tbs)|
|Mussels||26 Ounce, scrubbed and beards removed (800 Gram, 1 Pound 10 Ounce)|
|Chopped parsley||1 Tablespoon|
|Orange||1 , peeled and segmented|
1. Heat oil in a large frying pan over medium heat. Add onions and garlic and cook for 2 minutes. Add oregano, orange strips and wine, cook for a further 2 minutes.
2. lncrease heat, bring to the boil. Add mussels, cover and steam for 5 minutes. Transfer opened mussels to serving dish and discard any that do not open.
3. Stir parsley into mussel cooking liquid and bring to the boil. Stir in orange segments and pour sauce over mussels. Serve immediately.
