Spiced Plums In Wine

Ingredients
  Red plums 2 Pound
  Dry red wine 2 Cup (32 tbs)
  Honey 1⁄2 Cup (8 tbs)
  Whole cloves 3
  Whole allspice 3
  Cinnamon stick 1 , broken in 4 pieces
Directions

Wash firm, slightly underripe red plums.
Prick them all over with a sterilized needle.
Combine wine, honey and spices and bring to a boil.
Turn heat down and simmer for 5 minutes.
Add plums and bring slowly to a simmer using medium-low heat.
Remove from heat.
Allow plums to remain covered with syrup at room temperature for 12 hours or more.
Bring slowly to a simmer once again.
Allow to remain at room temperature for another 12 hours approximately, and bring them to a simmer slowly, again.
Continue to simmer plums this time, until they are tender, but still firm.
Cool and serve or store in refrigerator for future use.
