Champagne Mojitos

  Simple syrup 3⁄4 Cup (12 tbs)
  Mint leaves 1 1⁄2 Cup (24 tbs), packed
  Mint sprigs 12 (For Garnish)
  Limes 6 , cut into wedges
  Light rum 2 Cup (32 tbs)
  Cracked ice 1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)
  Champagne 3 Cup (48 tbs)

1. In a large pitcher, combine the simple syrup with the mint leaves and lime and muddle well with a wooden spoon. Add the rum and stir. Strain into another pitcher.
2. Fill tall glasses with cracked ice and pour in the drink, filling them about two-thirds full. Top with Champagne, garnish with the mint sprigs and serve.
