|Cracked ice||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
|Champagne||3 Cup (48 tbs)|
1. In a large pitcher, combine the simple syrup with the mint leaves and lime and muddle well with a wooden spoon. Add the rum and stir. Strain into another pitcher.
2. Fill tall glasses with cracked ice and pour in the drink, filling them about two-thirds full. Top with Champagne, garnish with the mint sprigs and serve.
